I love Raclette- a lot! If you’ve got something delicious it’s a fact that adding melting cheese on top will make it more delicious. To help celebrate Thanksgiving this year, we made Raclette with Grayson, freshly baked bread, and duck meat prosciutto. It was incredible and we absolutely ate an entire wheel’s worth of melted cheese and a whole duck breast’s worth of prosciutto. It was incredible and has absolutely become a new holiday tradition.
We used Grayson for melting yesterday. It’s beautiful floral yet meaty paste made for the perfect pairing with the cured meat while the crusty bread and was solid enough to hold a generous amount of melted cheese.
